KANSAS CITY — Product developers are utilizing bone broth in a variety of formats to appeal to consumers interested in protein and functional ingredients.
Within the snack market alone, products formulated with bone broth are one of the top emerging claims by volume growth, according to a recent report on the snack segment from Conagra Brands, Inc. The report, which cites data from Circana, found “contains bone broth” claims grew 67% over the last three years, alongside other ingredient claims such as “contains avocado oil” (which grew 82%) and “100% grass fed” (which also grew 67%).
Wilde is a snack maker formulating with bone broth. The company expanded its protein-centric portfolio with Wilde protein crackers, which are made with chicken breast, chicken bone broth and cheese. The crackers contain 12 grams of protein per serving.
“Crackers haven’t changed in decades,” said Jason Wright, founder and chief executive officer of Wilde. “We rebuilt them with chicken breast as the No. 1 ingredient. You get the crunch, the flavor, the snack you remember. But the protein is real and it comes from food you’d cook with. No fillers, no protein powder, no compromise on what a cracker should taste like.”
Marrō is bringing bone broth into the beverage aisle with its carbonated protein drink. The product features 12 grams of protein and zero grams of sugar per 12-oz can, along with collagen, essential amino acids, electrolytes and vitamin B12, according to the company.
“Most everyone knows bone broth is good for you, but it can be tough to include in your daily routine,” said Nick Foreste, founder and CEO of Marrō. “We started Marrō to change that; all the benefits of bone broth in a cold, refreshing can you can grab on the go.”
The Campbell’s Co. is using a bone broth base in some of its protein soups. The line contains 20 grams of protein per serving, and varieties include homestyle chicken and rotini, Italian-style wedding, lemon pepper chicken, Southwest black bean and Mediterranean lentil.
“New Campbell’s protein soups deliver the nutrition consumers are looking for from a brand they trust,” said Benjamin Crook, senior vice president, soup and broth at The Campbell’s Co. “With the goodness of bone broth and other delicious ingredients, we’ve created a satisfying soup that provides 20 grams of protein and a good source of fiber in every can. As consumers increasingly seek foods that offer both great taste and meaningful nutrition, this innovative product line will bring excitement and drive consumers to the soup category.”
